I don't know how many people you're going to have at your wedding, but you might look into Lake Arrowhead, as there are lots of venues with complete packages. It's a very picturesque town up in the mountains, about an hour away. A good place to start is Lakearrowheadweddings.com.
Also, feel free to contact me for wedding videography. I can make a beautiful video for you for very little cost. Eyelightent@mac.com
There is a place called GRAND TRADITIONS in the Temecula area you may want to look up. And if you have any needs for live ceremony and / or reception music:
I am located in Southern California and provide a variety of live music options for ceremony and reception from solo guitar and vocals to a trio playing dinner and dance music all the way up to a 6-piece dance band. Please visit my website at http://www.neil-smith.com to review all of my offerings and get in touch if anything interests you. I hope to be entertaining you soon!
Thanks and best regards,

My son and his fiance found a beautiful place in Lytle Creek called Green Mountain Ranch which is depending on where you are in Riverside about 15 minutes from Rancho Cucamonga. The place is beautiful. They have a website www.gmr.com. My son is paying about $3,500 and that includes food, linens, rental of the place, etc. Check it out!
First, congratulations on your engagement and upcoming wedding. I will leave it to the partypoppers on here to give actual names of places (this site offers the most helpful users) but somethings that might help keep the cost down... First, see if any of your friends or family would be willing to let you use their house and yard. You'd be amazed how a couple of bucks can transform a backyard. You also might want to think about having your wedding on a weekday (perhaps a Friday), some vendors lower cost for weddings that are off-season or scheduled on a weekday.
The most important part is to relax, I know that putting this all together can be stressful but you should be able to pull this off and stay in budget. It can be done and you will have a beautiful wedding.
And really, post all your questions on this site or even things you might need for your wedding. I bet you someone(s) will have what you need or have a terrific suggestion.
