I am a bridal consultant but I am moving away from that to a designer/decorator and teaching brides how to "design on a dime" there are a lot of neat things out there to create the ambiance without having an abundance of flowers. I am getting married on December 5, 2004 so I totally understand where you are coming from.

One of my favorite winter wedding themed centerpieces is a gingerbread house decorated to look like a snow covered cottage. (not a christmas theme..) They are beautiful and edible! You can also have guests take them home.
You can use white cotton candy as "snow" for the "ground" They are really cute!
Also, for winter themed weddings, snow globes make lovely centerpieces.
If your wedding is before Christmas, you can do snowflake ornaments for favors.
