For more than 400 years the original pioneers of Argentina, the Gauchos, have roamed the country's vast planes, the Pampas. Adorned in black hats, black boots, wearing wide pants tied at the waist by a coin belt and covered by thick wool coats, this counterpart of the American Cowboy still practice their ancestors' traditions. Cattle herding, working ranches, horse breading and ostrich-hunting are methods of old and handed down from generation after generation.

Among the Gauchos' rituals and traditions, none is more eagerly celebrated than the daily "asados" barbeques. As the sun goes down, huge wood fires brighten the sky. Red hot coals are gathered and thrown into big round sand pits and covered with a wired rack. Meat cuts of all kids, a variety of sausages, morcillas, mollejas, chicken, asado de tira and of course, steaks are sizzled on the grill to make a seemingly endless feast accompanied with hearty homemade wines. The gathering carries on into the night with guitar and bombo music and group singing.
