We use a unique vacuum tumbling process to marinate all of our meats. The vacuum actually pulls the fat out of the meat and in turn pulls the sauce deep into the meat, increasing the moisture level by as much as thirty percent! We then rotisserie cook our chicken and ribs over an open pit with 100% mesquite charcoal, adding a tempting barbecue auroma to your outdoor event.
