Pronounced cheel-pahn-seen-go, the name literally means, “a town where everything grows” and land of the jaguar and bees. It is the name of the state capital of Guerrero on Mexico’s beautiful Pacific Coast.

Born in Ixcapuzalco, Guerrero Generoso“Geno” Bahena, grew up working on his family’s ranch and orchard. He developed a respect for the things of the earth and saw hard work and dedication transform raw ingredients into high quality foodstuffs.

This is the foundation upon which Geno’s passion and love for the food of his native Mexico has grown. While still preserving family traditions, Geno and his cooking are often described as adventurous and creative, rustic, but most of all, passionate.

Geno’s first restaurant, the highly acclaimed, Ixcapuzalco Restaurante, is often referred to as “home of the moles.” Mole, is a word that describes a whole genre of sauces. It represents the passion, love and traditions that are present in Mexican cooking. Not an every day meal because of the complex preparation required, moles are celebratory and festive. Sophisticated and seductive, they are delicately balanced preparations, which bring the flavors of the earth together in harmony. Experience the nuances of all the moles as a different one is featured each night of the week at Ixcapuzalco Restaurante, Geno’s first home.

Join us at Chilpancingo, Geno’s second restaurant. Inspired by travels that have taken him to 31 states in Mexico from traditional restaurants and markets to Mexico City’s newest restaurants featuring contemporary Mexican cooking--at Chilpancingo we serve the specialties of each state. Geno creatively combines unique ingredients reinterprets traditional dishes in his own rustic yet sophisticated style.
